KALE PARMESAN SALAD by @chefzoeyblaq

This delicious and light salad is packed full of amazing nutrients. This salad base can also be paired with any other protein because the Kale tastes amazing!

 

 

INGREDIENTS

100g Curly Kale 

Grated Parmesan Cheese, handful

Lemon juice

Olive oil

Cherry Tomatoes, handful

1/2 small Red Onion

1 tsp Minced Garlic

Black pepper 

Salt 

Chopped Peanuts

 

 

INSTRUCTIONS

  1. Remove Kale Rib and chop up kale.
  2. Mix the olive oil, minced garlic, lemon juice, black pepper, salt to make dressing.
  3. Massage kale with dressing to release bitterness and infuse flavour.
  4. Mix in parmesan cheese, red onion and cherry tomatoes.
  5. Top with chopped peanuts.
