This refreshing Cucumber Salad is absolutely perfect for the summer! Serve as a side or pair with a protein of your choice for a balanced meal.
INGREDIENTS
5 Seedless Cucumbers
1 Beefsteak Tomato
1/2 medium sized Red Onion
Greek yoghurt
2 Garlic cloves
1/2 inch of fresh Ginger
1 tbsp Organic Honey
Juice of one Green Lemon
Salt and Pepper to taste
INSTRUCTIONS
- Prep and dice seedless cucumbers and beefsteak tomato
- Thinly slice red onion
- Place vegetables in a bowl and set aside
- For the dressing, mix greek yoghurt, garlic, ginger, honey, lemon juice in a bowl, add salt and pepper to taste
- Mix vegetables with dressing and set in the fridge for 1-2 hours
- Serve chilled
